- 1 ½ cup oats (140 g)
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 cup peanut butter (260 g)
- ¼ cup brown sugar (65 g)
- ½ cup almond milk (115 g)
- ½ cup chocolate chips
Instructions
- Heat an oven to 350℉. Prepare an 8 x 8 pan by lightly greasing it and making a parchment sling.
- Put the oats into a blender and blend for about 1 minute or until they are powdery and no large pieces of oats remain. Pulse in the baking powder and salt. Set aside.1 ½ cup oats, 1 ½ tsp baking powder, ½ tsp salt
- In a medium bowl add in the peanut butter, brown sugar, and almond milk. Stir until well combined.1 cup peanut butter, ¼ cup brown sugar, ½ cup almond milk
- Add the blended up oats, baking powder, and salt into the bowl with the peanut butter mixture. Mix everything together until no dry flour remains.
- Reserve a tablespoon of chocolate chips then fold in the rest of the chips into the batter.½ cup chocolate chips
- Put the batter into the prepared 8 x 8 pan, using your knuckles to spread it into an even layer. Sprinkle and press the reserved tablespoon of chocolate chips evenly across the top of the bars.
- Bake the bars for 16 – 18 minutes.
- Let bars cool for about 10 minutes in the pan, then lift out using the parchment sling. Let cool completely on a cooling rack. Once cooled completely, slice into 9 even squares.
