For this recipe you’ll need:
Yakisoba noodles – Thin, long noodles that take well to whatever delicious sauce you want to add to them. In this case, they pair perfectly with the delicious and creamy peanut sauce you’ll make to go on top.
Shrimp – Frozen raw shrimp are a super convenient protein source to keep in the freezer. The shrimp thaw easily in a bowl in the sink and cook up even faster.
Peanut butter – Use natural peanut butter for this recipe, meaning the only ingredients should be peanuts and salt.
Rice vinegar – Vinegar adds an easy pop of brightness to the flavor profile of the peanut sauce.
Soy sauce – No Asian dish is quite the same without at least a splash of soy sauce. Besides the salt in the peanut butter, soy sauce is the main source of seasoning for this quick dish.
Ground ginger – Make sure your ground ginger is fresh. As easy way to check this is to see how fragrant it is. If your ground ginger has hardly any fragrance, thank it’s time to replace with some fresh stuff. Fresh ground ginger will yield a better dish without the hassle of mincing fresh ginger root by hand.
Garlic – To make prep easy, use a garlic press to mince the garlic.
Green onion – You’ll stir them into the peanut sauce as well as a sprinkle them on top of the finished dish to add a fresh pop of green to the dish.
Sesame oil – A powerhouse for both richness and rich umami flavor. Even just a drizzle of sesame oil really adds so much to a meal.

Tips
The tips below will help you make this recipe as smoothly as possible. There’s also some suggestions for what types of vegetables can be easily added to boost your veggie intake.
- Don’t over cook the shrimp. Shrimp truly cooks in a flash. Once the shrimp is pink, opaque, and beginning to curl into a circle, then it’s finished cooking and safe to eat.
- Quickly thaw shrimp in a bowl filled with cool water. Frozen shrimp is quick and easy to thaw. Just place the shrimp in a bowl and set in the sink. Fill the bowl with cool water. Stir the shrimp around and gently pull frozen shrimp apart from each other. Within 5 minutes the shrimp will be thaw and ready to cook.
- Add vegetables. Vegetables are a great addition to this dish. Try broccoli, bok choy, or snap peas. These options cook quickly and add a great pop of color. Simply add them into the boiling water along with the noodles and shrimp.
- Add more water if the sauce seems thick. If you add the 1/2 cup of water to the sauce, but it still seems too thick, add more water a tablespoon at a time until it’s the consistency you want.
- Chopsticks are perfect to toss the noodles in the sauce. The best way to toss the noodles in the sauce is by using chopsticks. A spoon or fork are more likely to smoosh the noodles and less likely to get an even coating of sauce throughout all the noodles.
