On the stove top, bring 2 quarts water to a boil. Make the peanut sauce as the water heats up.
To a medium bowl, mix peanut butter, soy sauce, rice vinegar, and sesame oil together until well combined.
½ cup natural peanut butter, ¼ cup soy sauce, 3 TBS rice vinegar, 2 TBS sesame oil
Add the garlic, ginger, and green onion to the sauce. Stir to incorporate. Set sauce aside.

When the water is boiling, add in the noodles and shrimp. Bring back to a boil, and let noodles and shrimp cook for about 2 minutes. Take out ½ cup of the hot water while they cook.
1 lb Yakisoba noodles, 1 lb frozen raw shrimp
Strain the noodles and shrimp in a colander set in the sink. Immediately rinse with cool water.
Add hot cooking water to the sauce and stir until creamy and smooth.

Return the noodles and shrimp to the pot. Pour in the peanut sauce then gently stir to coat the noodles and shrimp in the sauce. Enjoy!
