15 minute Shrimp Yakisoba Noodles with Peanut Sauce

Ingredients
  

  • 1 lb Yakisoba noodles
  • 1 lb frozen raw shrimp

Peanut Sauce

  • ½ cup natural peanut butter (creamy or chunky)
  • ¼ cup soy sauce
  • 3 TBS rice vinegar
  • 2 TBS sesame oil
  • 2 cloves garlic minced or pressed
  • 1 tsp ground ginger
  • 2 stalks green onion chopped
  • ½ cup hot water (from boiling shrimp and noodles)

Instructions
 

  • On the stove top, bring 2 quarts water to a boil. Make the peanut sauce as the water heats up.
  • To a medium bowl, mix peanut butter, soy sauce, rice vinegar, and sesame oil together until well combined.
    ½ cup natural peanut butter, ¼ cup soy sauce, 3 TBS rice vinegar, 2 TBS sesame oil
  • Add the garlic, ginger, and green onion to the sauce. Stir to incorporate. Set sauce aside.

  • When the water is boiling, add in the noodles and shrimp. Bring back to a boil, and let noodles and shrimp cook for about 2 minutes. Take out ½ cup of the hot water while they cook.
    1 lb Yakisoba noodles, 1 lb frozen raw shrimp
  • Strain the noodles and shrimp in a colander set in the sink. Immediately rinse with cool water.
  • Add hot cooking water to the sauce and stir until creamy and smooth.

  • Return the noodles and shrimp to the pot. Pour in the peanut sauce then gently stir to coat the noodles and shrimp in the sauce. Enjoy!
