Ingredients
Graham Cracker Crust
- 12 sheets graham crackers
- 2 TBS honey (40 g)
- 8 TBS melted butter (1 stick, 113 g)
Filling
- 1 cup creamy natural peanut butter (225 g)
- 1 ¼ cups pitted medjool dates (150 g, ~14 dates)
- 1 cup milk (250 g)
- 1 tsp vanilla extract

Instructions
Make the Crust
- Put the graham crackers into a gallon sized zip top bag. Using a rolling pin, crush them into crumbs.12 sheets graham crackers
- Put the graham cracker crumbs into a medium sized mixing bowl. Add the honey and melted butter. Mix until well combined.2 TBS honey, 8 TBS melted butter
- Lightly grease a 9" pie dish. Pour the crumb mixture into the pie dish. Using your fingers and the flat bottom of a cup or measuring cup, press the crumb mixture into the bottom and sides of the pie dish. Set aside.
Make the Filling
- In a high speed blender add the peanut butter, dates, milk, and vanilla. Blend until smooth, stopping to scrape the sides as needed.1 cup creamy natural peanut butter, 1 ¼ cups pitted medjool dates, 1 cup milk, 1 tsp vanilla extract
- Pour the filling into the pie crust, smoothing the top with a rubber spatula.
- Cover and chill in the refrigerator for at least 3 hours.
