How to make peanut butter date energy balls

Get out your food processor! Making these peanut butter date energy bites is simple and mess-free.

  1. Soak the dates – Place pitted medjool dates in a bowl and cover with hot water. Let sit for 10 minutes to soften.
  2. Prepare oat flour – While the dates soak, add oats to a food processor and process until they become a fine flour.
  3. Process the mixture – Drain the dates and add them to the food processor along with peanut butter and melted coconut oil. Blend until the mixture is smooth and homogenous.
  4. Chill – Transfer the mixture to the refrigerator for about 30 minutes to firm up.
  5. Shape the bites – Roll the chilled mixture into 20 small balls.
  6. Store – Keep them in an airtight container in the fridge for up to 1 week.

Prep tips

  • Use fresh, soft dates – If your dates are dry, soaking them in hot water is essential for blending.
  • Adjust consistency if needed – If the mixture feels too dry, add a touch more melted coconut oil. If too sticky, sprinkle in a few more oats.
  • Make ahead – These bites are perfect for meal prep. Double the recipe and store extras in the freezer for longer storage.
  • Switch it up – Add a sprinkle of cinnamon, a spoonful of cocoa powder, or roll the bites in shredded coconut for variety. Or mix in extras like mini chocolate chips or chia seeds.
