Ingredients
  

  • ½ lb (219 g) Medjool dates
  • 1 ½ cups (150 g) old fashioned oats
  • 1 cup (256 g) natural peanut butter
  • ¼ cup (56 g) coconut oil, melted

Instructions
 

  • Put the dates in a heat safe boil. Cover the dates in boiling hot water. Cover the bowl and let sit 15 minutes.
    ½ lb (219 g) Medjool dates
  • Drain the dates well.
  • Place the oats into a food processor and process into a fine flour.
    1 ½ cups (150 g) old fashioned oats
  • Add the drained soaked dates, peanut butter, and melted coconut oil to the food processor.
    1 cup (256 g) natural peanut butter, ¼ cup (56 g) coconut oil, melted
  • Process until the dates are completely broken down and everything is homogenous.
  • Chill the mixture for 20 minutes.
  • Scoop a heaping tablespoon of the mixture and roll into a ball (~30 grams each). Repeat until all the mixture is used. Makes 20-23 energy balls.
  • Store in an airtight container in the refrigerator for up to a week.
