Ingredients
  

  • 1 ½ cups Plain Greek yogurt
  • 1 tsp Vanilla extract
  • 2 TBS Honey
  • 20 oz Canned crushed pineapple
  • 11 oz Canned mandarin oranges

Instructions
 

  • Using a fine mesh strainer, drain the crushed pineapple well. Transfer to a bowl. Using the same strainer, drain the mandarin oranges well.
    20 oz Canned crushed pineapple, 11 oz Canned mandarin oranges
  • In a small bowl, mix Greek yogurt with honey and vanilla extract until smooth and lightly sweetened. Taste and adjust honey if needed.
    1 ½ cups Plain Greek yogurt, 1 tsp Vanilla extract, 2 TBS Honey
  • Add a generous layer of crushed pineapple* to the bottom of clear glasses or cups. This creates the yellow “candy corn” layer.
  • Spoon mandarin slices on top of the pineapple to form the orange layer. Lightly press them down so the layers stay distinct.
  • Finish with a thick layer of the vanilla-honey Greek yogurt on top to mimic the white tip of candy corn.
  • Serve immediately or chill in the fridge until ready to eat.

Notes

*You may not use the entire can of pineapple.
