Ingredients
For the sweet potato and crumble topping, you’ll need the following ingredients:
- Sweet Potato – You’ll want to use a sweet potato that isn’t too large. Anything very big will take a long time to cook. To keep the cook time to around 5 – 8 minutes, choose one that is at most half a pound in weight.
- Oats – They add texture and substance to your maple crumble that will be served in the sweet potato.
- Walnuts – Also provides texture, as well as flavor, to the crumble. You can substitute with almonds, cashews, or any other type of nut or seed you prefer.
- Avocado oil – Helps bring the crumble together in the food processor. I like the neutral flavor profile of avocado oil, but if you want more flavor, feel free to use melted butter instead.
- Maple syrup – Provides great flavor and adds the perfect touch of sweetness to the crumble.
- Cinnamon – This warming spice perfectly compliments the maple and oat going on and elevates the whole crumble topping to a new level.
- Salt – A little salt balances out the flavor.
You’ll only need a few simple ingredients to make a yogurt drizzle that totally takes this simple breakfast idea and makes it feel quite elegant. For the drizzle all you’ll need is:
- Yogurt – The main base to this sauce, it adds a little bit of tang as well as richness. Use an unsweetened plain yogurt.
- Maple syrup – A little dash of this just adds a touch of sweetness while still leaving a little tang.
- Milk of choice – You’ll only need a couple teaspoons to help thin it out and make it nice and drizzly.

Tips for the best breakfast crumble stuffed sweet potato
These tips will help you make the most of this recipe.
- Scrub the sweet potato nice and clean. Since you won’t be peeling the sweet potato for this recipe, be sure to scrub the skin really well to remove any dirt.
- Make sure to poke holes in the skin of the potato. Poking the sweet potato with a fork a few times gives the steam a way to escape while the sweet potato cooks in the microwave. This is very important to do to prevent the sweet potato from exploding in your microwave, so do not skip this step!
- Microwave the potato until very tender. You do not want a crunchy, raw center to your sweet potato, so make sure to cook it as long as it needs until it’s very tender all the way through. All microwaves are different, so the cook time may vary from what is estimated in the recipe.
