Maple Oat Crumble Stuffed Sweet Potato

This dish combines the natural sweetness of sweet potatoes with a crunchy maple oat topping. It’s not only tasty and packed with nutrients, but is also quickly made in the microwave.

Ingredients
  

  • 1 sweet potato (~½ pound)

Maple oat crumble

  • ½ cup oats
  • ¼ cup walnuts
  • ½ TBS avocado oil
  • ½ TBS maple syrup
  • ¼ tsp cinnamon
  • pinch of kosher salt

Yogurt drizzle

  • 2 TBS plain yogurt
  • 1 tsp maple syrup (optional)
  • 1 TBS milk of choice

Instructions
 

Microwave the sweet potato

  • Wash the sweet potato clean. Using a fork, prick the potato several times. Put on a microwave plate and microwave on high for 5 - 8 minutes or until it can easily be poked through with a fork.

Make the crumble

  • As the sweet potato cooks, make the maple oat crumble. In the bowl of a food processor or blender, put the oats, walnuts, coconut oil, maple syrup, cinnamon, and salt. Pulse until it's all mixed together but still chunky.
    ½ cup oats, ¼ cup walnuts, ½ TBS avocado oil, ½ TBS maple syrup, ¼ tsp cinnamon, pinch of kosher salt
  • Cut open the sweet potato and fluff the insides with a fork a little bit. Add the oat crumble to the sweet potato.
  • Drizzle with the yogurt and enjoy!
