Natural peanut butter – Provides healthy fats, protein, and that nutty flavor we all love.

Medjool dates – Naturally sweet and sticky, dates act as both a sweetener and binder.
Coconut oil – Helps the mixture hold together and adds a touch of healthy fat and moisture.

How to make peanut butter date energy balls
Get out your food processor! Making these peanut butter date energy bites is simple and mess-free.
- Soak the dates – Place pitted medjool dates in a bowl and cover with hot water. Let sit for 10 minutes to soften.
- Prepare oat flour – While the dates soak, add oats to a food processor and process until they become a fine flour.
- Process the mixture – Drain the dates and add them to the food processor along with peanut butter and melted coconut oil. Blend until the mixture is smooth and homogenous.
- Chill – Transfer the mixture to the refrigerator for about 30 minutes to firm up.
- Shape the bites – Roll the chilled mixture into 20 small balls.
- Store – Keep them in an airtight container in the fridge for up to 1 week.

Prep tips
- Use fresh, soft dates – If your dates are dry, soaking them in hot water is essential for blending.
- Adjust consistency if needed – If the mixture feels too dry, add a touch more melted coconut oil. If too sticky, sprinkle in a few more oats.
- Make ahead – These bites are perfect for meal prep. Double the recipe and store extras in the freezer for longer storage.
- Switch it up – Add a sprinkle of cinnamon, a spoonful of cocoa powder, or roll the bites in shredded coconut for variety. Or mix in extras like mini chocolate chips or chia seeds.
