Place one oven rack in the center of the oven and another oven rack in the lowest position of the oven. Heat the oven to 400℉.
Scrub the potatoes clean. Cut the clean potatoes into quarters lengthwise. Next, slice each potato quarter into ¼" french fries.
1 ½ lbs russet potatoes
Place the cut potatoes into a large bowl. Drizzle with oil. Toss the potatoes to evenly coat with the oil.
3 TBS oil
In a small bowl, mix the garlic salt, paprika, and onion powder together. Pour half the seasoning mix onto the potatoes. Using your hands, mix and coat the fries with the seasonings. Add the rest of the seasoning mix and use your hands to coat again.
1 ½ tsp garlic salt, 1 tsp paprika, 1 tsp onion powder
Between two baking sheets, arrange the fries in a single layer. Be sure not to crowd the pans.
Bake the fries for 25 minutes. Halfway through, switch the baking sheets between oven racks and rotate each pan as well.
Remove the fries from the oven when they are golden, crispy, and release fairly easily from the baking sheet. Use a spatula to release fries from the baking sheets.
Enjoy with your favorite dip or by themselves.
