Ingredients
  

  • 1 shallot roughly chopped
  • ¼ cup apple cider vinegar
  • 2 TBS light yellow miso paste
  • 2 TBS almond butter
  • ¼ cup water

Instructions
 

  • Roughly chop the shallot to help it easily blend smoothly into the dressing.
  • In a blender or food processor, add the apple cider vinegar, miso paste, almond butter, chopped shallot, and a quarter cup of water.
    ¼ cup apple cider vinegar, 2 TBS light yellow miso paste, 2 TBS almond butter, ¼ cup water, 1 shallot
  • Process the ingredients until the dressing is completely smooth and creamy. If needed, add a little more water to reach your desired consistency.
  • Transfer the dressing to an airtight container and store it in the fridge. It will keep well for up to a week. Give it a stir before using, and drizzle it over salads, grain bowls, or roasted veggies!
