It’s warm, lightly spiced, and naturally sweet without any added sugar. Plus, it’s completely egg-free and easy to make—perfect for busy mornings or meal prep.

Ingredients
  

  • 2 cups old fashioned rolled oats
  • 2 TBS ground flaxseeds
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ¼ tsp kosher salt
  • 2 cups milk
  • 1 cup finely grated carrot (grated on the small holes)
  • ¼ cup applesauce
  • 1 tsp vanilla

Instructions
 

  • Place an oven rack in the center position. Preheat your oven to 350°F. lightly grease an 8x8-inch baking dish and line with a parchment paper sling.
  • In a large bowl, whisk the oats, flaxseeds, cinnamon, ginger, and salt together. Set aside.

  • In a medium mixing bowl, whisk the milk, grated carrots, applesauce, and vanilla.
    2 cups milk, 1 cup finely grated carrot, ¼ cup applesauce, 1 tsp vanilla
  • Pour the milk mixture into the large bowl of oats and stir everything together until well combined.
  • Transfer the mixture into your prepared baking dish, spreading it out evenly with a spoon or spatula.
  • Bake for 20 minutes, or until the oatmeal is set and lightly golden on top.
  • Remove from the oven and let cool for 5 minutes to cool and set slightly. Top with yogurt and a sprinkle of cinnamon and enjoy!
