Place an oven rack in the center position. Preheat your oven to 350°F. lightly grease an 8x8-inch baking dish and line with a parchment paper sling.
In a large bowl, whisk the oats, flaxseeds, cinnamon, ginger, and salt together. Set aside.
2 cups old fashioned rolled oats, 2 TBS ground flaxseeds, 1 tsp cinnamon, ½ tsp ground ginger, ¼ tsp kosher salt
In a medium mixing bowl, whisk the milk, grated carrots, applesauce, and vanilla.
2 cups milk, 1 cup finely grated carrot, ¼ cup applesauce, 1 tsp vanilla
Pour the milk mixture into the large bowl of oats and stir everything together until well combined.
Transfer the mixture into your prepared baking dish, spreading it out evenly with a spoon or spatula.
Bake for 20 minutes, or until the oatmeal is set and lightly golden on top.
Remove from the oven and let cool for 5 minutes to cool and set slightly. Top with yogurt and a sprinkle of cinnamon and enjoy!
