Date Sweetened Chocolate Chip Cookies

These date sweetened chocolate chip cookies are everything you love in a classic chocolate chip cookie without the processed sugar.

Ingredients
  

  • 1 cup whole wheat flour (120 g)
  • 1 cup pitted medjool dates (100 g) 8-10 dates
  • 1 TBS cornstarch
  • ½ tsp kosher salt
  • ¼ tsp baking soda
  • 6 TBS melted butter (85 g)
  • 1 whole egg room temp
  • 1 tsp vanilla
  • ½ cup chocolate chips

Instructions
 

  • In the bowl of a food processor, add the flour, dates, cornstarch, salt and baking soda. Process for 4 - 5 minutes on high until the mixture resembles brown sugar. The dates should be mostly integrated into the flour, with a few pea sized pieces here and there. See image in the post above. Set aside.

  • In a large bowl, whisk together the melted and cooled butter, egg, and vanilla.
    6 TBS melted butter, 1 whole egg, 1 tsp vanilla
  • Add the flour mixture to the butter mixture. Mix until combined.
  • Fold in the chocolate chips (The batter will be shiny and kind of greasy looking. It will be less greasy after after resting covered on the counter).
    ½ cup chocolate chips
  • Cover and let the dough rest on the counter for 15-20 minutes.
  • Meanwhile, place an oven rack in the center position and heat the oven to 350℉.
  • Once the dough has rested, portion it into balls that are about 2 TBS each in size.
  • Place the dough balls about 4" apart on a lined cookie sheet. Using clean fingers, flatten each dough ball into a 3" diameter disc.
  • Bake for 10 minutes. Remove from the oven and let cool for 10 minutes on the cookie sheet. Enjoy!
