Adjust an oven rack to the center position. Heat your oven to 350° F. Grease and flour a 9" x 5" loaf pan
In a large bowl, mash the bananas really well until they are smooth. Once the bananas are smooth, add in the honey and oil. Mix until everything is combined.
1 ½ cups mashed ripe banana, ¾ cup honey, ½ cup avocado oil
In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
3 cups spelt flour, 1 tsp cinnamon, 1 tsp baking powder, ½ tsp baking soda, ½ tsp kosher salt
Add the dry ingredients in with the wet ingredients. Stir together until there are no longer patches of dry flour.
Pour the batter into the prepared loaf pan. If you want to add some pizzazz, slice a peeled banana in half lengthwise. Place one half of the sliced banana cut side up on top of the batter.
Bake the bread for 50 - 55 minutes. Let cool in pan for 15 minutes, then remove from pan and continue to cool completely before serving. It's even better the next day!
