Ingredients
  

  • 1 ½ cups mashed ripe banana (377 g, about 3-4 bananas)
  • ¾ cup honey (270 g)
  • ½ cup avocado oil (94 g)
  • 3 cups spelt flour (420 g)
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp kosher salt

Instructions
 

  • Adjust an oven rack to the center position. Heat your oven to 350° F. Grease and flour a 9" x 5" loaf pan
  • In a large bowl, mash the bananas really well until they are smooth. Once the bananas are smooth, add in the honey and oil. Mix until everything is combined.
    1 ½ cups mashed ripe banana, ¾ cup honey, ½ cup avocado oil
  • In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.
    3 cups spelt flour, 1 tsp cinnamon, 1 tsp baking powder, ½ tsp baking soda, ½ tsp kosher salt
  • Add the dry ingredients in with the wet ingredients. Stir together until there are no longer patches of dry flour.
  • Pour the batter into the prepared loaf pan. If you want to add some pizzazz, slice a peeled banana in half lengthwise. Place one half of the sliced banana cut side up on top of the batter.
  • Bake the bread for 50 - 55 minutes. Let cool in pan for 15 minutes, then remove from pan and continue to cool completely before serving. It's even better the next day!
