Made with lean ground turkey, a bag of coleslaw mix, and an easy homemade sauce, this stir fry is super easy to make.

Ingredients
  

Sauce

  • 1/4 cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 TBS honey
  • 1 TBS cornstarch

Stir Fry

  • 1 TBS neutral oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 TBS ginger minced
  • 1 lb ground turkey
  • 14 oz bag tri-color coleslaw mix

Instructions
 

  • In a small bowl, whisk together the soy sauce, honey, sesame oil, and cornstarch with a fork. Set aside.

  • Heat a large skillet over medium heat. Add the oil and swirl to coat the bottom of the pan. Add the onion and sauté for about 3 minutes until they soften.

  • Stir in the garlic and ginger, cooking for 1 more minute.
    3 cloves garlic, minced, 1 TBS ginger minced
  • Add the ground turkey to the skillet. Cook for about 5 minutes, breaking it up with a spatula as it browns.

  • Pour in the bag of coleslaw mix and stir well. Cook for another 3 minutes, letting the cabbage soften slightly.

  • Right before adding, whisk the sauce one more time, then pour the mixture over the stir fry, stirring to coat everything evenly. Cook for another 3 minutes until the sauce thickens.
  • Serve the stir fry over a bed of rice. Garnish with chopped cilantro and green onions. Enjoy!
