In a small bowl, whisk together the soy sauce, honey, sesame oil, and cornstarch with a fork. Set aside.

Heat a large skillet over medium heat. Add the oil and swirl to coat the bottom of the pan. Add the onion and sauté for about 3 minutes until they soften.

Stir in the garlic and ginger, cooking for 1 more minute.

Add the ground turkey to the skillet. Cook for about 5 minutes, breaking it up with a spatula as it browns.

Pour in the bag of coleslaw mix and stir well. Cook for another 3 minutes, letting the cabbage soften slightly.

Right before adding, whisk the sauce one more time, then pour the mixture over the stir fry, stirring to coat everything evenly. Cook for another 3 minutes until the sauce thickens.
Serve the stir fry over a bed of rice. Garnish with chopped cilantro and green onions. Enjoy!
