Applesauce Spice Cake

  • 1 ½ cups whole wheat flour (175 g)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp kosher salt
  • 1 tsp cinnamon
  • ¼ tsp ginger
  • tsp cloves
  • tsp nutmeg
  • 1 cup applesauce (285 g)
  • ¼ cup neutral oil (63 g)
  • ½ cup honey (165 g)
  • 2 tsp vanilla (14 g)

Honey Cream Cheese Frosting

  • 8 oz cream cheese room temperature (227 g)
  • 4 TBS butter room temperature (57 g)
  • 2 TBS honey (50 g)
  • 1 tsp vanilla
  • pinch salt

Instructions
 

Applesauce Cake

  • Place an oven rack in the center position of the oven. Heat the oven to 350° F. Grease an 8" x 8" baking pan and set aside.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, cloves, and nutmeg.
    1 ½ cups whole wheat flour, 1 tsp baking soda, 1 tsp baking powder, ½ tsp kosher salt, 1 tsp cinnamon, ¼ tsp ginger, ⅛ tsp cloves, ⅛ tsp nutmeg
  • In a large bow, mix together the applesauce, oil, honey, and vanilla until completely combined.
    1 cup applesauce, ¼ cup neutral oil, ½ cup honey, 2 tsp vanilla
  • Pour the batter into the prepared pan. Bake until the cake is a deep golden brown and set in the middle. About 32 minutes.
  • Let the cake cool completely on a wire rack.

Honey Cream Cheese Frosting

  • Put the cream cheese, butter, honey, vanilla, and salt in a medium bowl. Using a hand mixer, whip everything together until smooth and creamy.
    8 oz cream cheese, 4 TBS butter, 2 TBS honey, 1 tsp vanilla, pinch salt

Assemble and serve

  • Once the cake is completely cool, dollop the cream cheese frosting on top and smooth into an even layer over the surface of the cake. Cut into 9 equal pieces and enjoy!
