Equipment

  • Hand or stand mixer
  • Mixing bowl

Ingredients

  • 1 cup heaving whipping cream cold
  • 1 TBS honey (20 g)
  • ¼ tsp vanilla extract
  • pinch salt

Instructions

  • Keep the cream in the fridge until right before whipping. For the best results, also chill your mixing bowl and beater attachments in the freezer for at least 15 minutes before starting.
  • Pour the cold heavy cream into your chilled bowl. Add the honey, vanilla extract, and a good pinch of salt. Using an electric hand mixer or stand mixer, whisk everything until the cream holds it shape pretty well, but the tip of the peaks curl slightly when the beaters are lifted (known as firm or medium peaks)
1 cup heaving whipping cream, 1 TBS honey, ¼ tsp vanilla extract, pinch salt
  • Enjoy immediately dolloped on top of your favorite pumpkin pie or apple pie, or store in an airtight container in the fridge for up to 24 hours.
