Korean Carrot Salad

In just 5 minutes, you can whip up this simple and tasty Korean carrot salad, adding vibrant flavors and color to your meal.

- 3 large carrots (~300 g total)
- 1 TBS soy sauce
- 1 TBS rice vinegar
- 1 TBS sesame oil
- ¼ tsp cayenne pepper (optional)
- 2 tsp toasted sesame seeds (optional)
Wash and peel the carrots.
Using the large holes on a box grater, grate the carrots. You should have about 3 cups of grated carrots.

Put the carrots in a large bowl. Add the soy sauce, rice vinegar, and sesame oil. Stir to coat the carrots. Sprinkle on the cayenne pepper (if using) and mix to evenly distribute.

Sprinkle on the toasted sesame seeds. Mix.
