Korean Carrot Salad

Ingredients
  

  • 3 large carrots (~300 g total)
  • 1 TBS soy sauce
  • 1 TBS rice vinegar
  • 1 TBS sesame oil
  • ¼ tsp cayenne pepper (optional)
  • 2 tsp toasted sesame seeds (optional)

Instructions
 

  • Wash and peel the carrots.
  • Using the large holes on a box grater, grate the carrots. You should have about 3 cups of grated carrots.

  • Put the carrots in a large bowl. Add the soy sauce, rice vinegar, and sesame oil. Stir to coat the carrots. Sprinkle on the cayenne pepper (if using) and mix to evenly distribute.

  • Sprinkle on the toasted sesame seeds. Mix.
    2 tsp toasted sesame seeds
  • Enjoy on a Korean beef bowl or on its own.
