Nut and Seed Muesli

This nut and seed muesli recipe is the perfect solution to easy healthy breakfasts!
With this muesli on hand, you have a bunch of healthy breakfast options you can make. Enjoy it soaked overnight a la overnight oats, sprinkle it over yogurt with a drizzle of honey, enjoy it with a splash of milk and some fruit, or cook it like oatmeal.

Ingredients
  

  • 2 cups old fashioned rolled oats (200 g)
  • ¼ cup pumpkin seeds (40 g)
  • ¼ cup sunflower seeds (40 g)
  • ¼ cup chopped Brazil nuts (40 g) ~ 12 nuts chopped
  • 2 TBS sesame seeds (16 g)
  • 2 TBS chia seeds (22 g)

Instructions
 

  • Chop the Brazil nuts with a sharp knife into small pieces.
  • For extra flavor and crunch, spread the sesame seeds, sunflower seeds, pumpkin seeds, and chopped Brazil nuts on a baking sheet. Toast them in a 325°F (160°C) oven for about 8–10 minutes, stirring halfway through.

  • To a large bowl, add the rolled oats, nuts, and seeds and mix everything together.
    2 cups old fashioned rolled oats, 2 TBS chia seeds
  • Transfer the muesli to a glass jar or an airtight container to keep it fresh. It will stay good for several weeks in a cool, dry place.
    Serve it with milk or yogurt. You can also soak it overnight in milk for a softer, Swiss-style muesli.
