Place a large pot over medium-low heat. Add olive oil and heat until glimmering. Add diced onion and sauté for 5 minutes, stirring occasionally. Lower the heat if the onions start to brown.

Stir in garlic and cook until fragrant, about 30 seconds.

Add ground turkey. Cook the turkey until cooked through and browned, about 6 minutes, stirring occasionally to break it up into small pieces.
1 lb Italian style ground turkey
Once turkey is cooked through, tip the pot slightly to one side and, using a large spoon, spoon out any excess liquid from the pot.
Raise heat to medium. Add tomatoes, oregano, salt, and water. Bring to a boil.
28 oz can crushed tomatoes, 1 tsp dried oregano, 1 tsp kosher salt, 2 ½ cups water
Once boiling, stir in the uncooked pasta. Return to a boil, then reduce heat to low, cover, and simmer until pasta is just cooked through, about 8 - 10 minutes. Briefly stir once or twice throughout cooking time to keep food from sticking to the bottom of the pot.
1 lb rotini pasta
When pasta in cooked, remove pot from the heat and stir in half of the grated parmesan, reserving the rest to sprinkle on individual portions. Optionally you could also add some fresh basil. Enjoy!
