Nothing says summer quite like a fresh, vibrant salad—and this strawberry spinach and arugula salad is as colorful and refreshing as the season itself.

Strawberry Spinach Arugula Salad
- 5 oz spinach and arugula mix
- 2 cups sliced strawberries
- 1 cup toasted walnuts
- 5 radishes, thinly sliced
- ½ cup (2.5 oz / 77 g) crumbled feta cheese
- 1 recipe of Roasted Strawberry Balsamic Vinaigrette
How to make the dressing:
Place an oven rack in the center of the oven. Heat your oven to 350° F. Line a rimmed baking tray with parchment paper.
Place the halved strawberries on the prepared baking tray. Drizzle them with 1 TBS of the oil.
Roast the strawberries in the oven for 20 minutes, until juicy, slightly shrunken, and darker in color. Let cool on the tray for 5 minutes.
Put the cooled roasted strawberries to a small food processor or blender. Add the remaining 2 TBS of oil, the balsamic vinegar, salt, and pepper.
Blend until smooth and creamy. Transfer to an air tight container and let chill in the fridge.
How to make the salad
Put the spinach and arugula mix in a large salad bowl. Drizzle a quarter of the chilled dressing over the greens and gently toss until coated. Drizzle with a quarter more of the dressing and toss again.

Add the sliced strawberries, toasted walnuts, and sliced radishes. Toss to distribute.

Sprinkle with the crumbled feta. Serve and enjoy! Drizzle with extra dressing if desired.
