Take the 2 store bought pie crusts out of the fridge or freezer. Keep them wrapped in their plastic, and let them sit out on the counter to warm up a little bit. This makes them roll out easier.If they were in the fridge, it should only take 10 minutes or so. If from the freezer, it'll take about 30 minutes. 2 store bought pie crusts
Place an oven rack in the center position of your oven. Heat the oven to 350° F. Line a baking tray with parchment paper.
Roll out the pie crusts into 12" diameter discs. Using a ruler to measure, cut one of the pie crusts into an 8x8-inch square.
Set the cut pie dough square on top of the other pie crust. Using it as a guide, cut the second pie crust to the same sized square.
Place one of the squares onto the lined baking tray. Set the other pie dough square aside for later.
Using a butter knife or bench scraper, make lines on the square, sectioning it into 4 equal quadrants, without cutting them apart.
Spoon a tablespoon of strawberry jam onto each section of the dough. Spread the jam into an even layer, leaving about an inch border around the edges. Using a clean finger or pastry brush, carefully brush milk around the edges.

Place the second square of dough on top of the first. Using a fork, seal the outside edges well.
Cut the sections apart with a sharp knife. Space the pop tarts about 2" apart from each other on the baking tray.
Seal the remaining edges well with a fork. Then, gently poke holes in the top of each pastry, being careful not to poke through the bottom layer of pie dough. Brush the top of each pop tart with milk to help with browning.
Bake in the heated oven for 25 - 30 minutes (or until golden brown). Remove from the oven and let them cool on the baking sheet for 3 minutes before transferring to a wire rack.
